Recipe #13: Blueberry Nectarine Pie

Today’s recipe is Blueberry Nectarine Pie, and our hosts are Lizzy of That Skinny Chick Can Bake and Hilary of Manchego’s Kitchen. You can find the recipes there, or in the Baking with Julia cookbook on page 384.

I made the crust and the pie exactly according to the directions, and only struggled a bit with the crust recipe.  The blueberries and nectarines turned out great in the filling, not too runny as many of the other bloggers noted.  Maybe I cooked it a little longer because I neglected it while making the pie crust?  The crust on the other hand… not so easy to roll out, and why did the recipe call for a cup of ice water?  I used half that much and probably still put in too much because I had to use a lot of flour on the counter when I rolled out the crust. And the crust broke apart when I tried to lift it up, but it patched up ok in the pie pan.  The good news is that it tasted yummy, especially with a little vanilla ice cream.  I made 2 pies and shared one with my book club last Thursday night, then the other one with friends in town for a wedding on Friday night.  Rave reviews all around.

The crust is patched up, filled and ready to go into the oven.

Mmmm….now it sits on the counter for most of the day so the filling can set up.

Pie and ice cream, good friends, a cold beer and a cozy fire pit on a cool summer night. What more does one need?  Life is good.
